Strawberry & Banana Smoothie
~Light Coconut Milk Ice Cubes
~Plain Ice Cubes
~Splash of Pineapple Juice
~Fresh Strawberries (frozen work too)
~Fresh/ Frozen Banana's
~1 Packet of truvia (optional)
~ 1 Tablespoon of Coconut Butter/oil
This Smoothie came out so great! The kids were beggin for more! Like most families on weeknights we have sports, usually two sports in two different directions. I have been using my Crockpot which works great because diner is ready when the kids need to eat. Seems like these days with the day light a little longer there opting to eat after! So I need to make something to hold them over.
I had a ton of fresh strawberries so I whipped up something filling and that would give them some energy. I keep banana's in the freezer at all times. I also like to make coconut milk ice cubes and keep them in the freezer as well. I use light coconut milk. This only had a hint of coconut flavor so don't panic if you don't love coconut like us :). Also like in all my recipes if you don't like something leave it out! You use could use almond milk or something similar. I wanted to make sure they had some healthy fats (Coconut) and protein (Hemp Seeds) to keep them full until dinner. Hemp seeds taste great and are full of Protein and Omega 3 & 6 Essential fatty Acids.
Remember I just toss it all in the Vita-Mix and blend ~ Enjoy!!!
